Simple Rice Porridge (Congee)

Ingredients
- •1/2 cup white rice (jasmine or short grain)
- •4 cups chicken stock or water
- •1 tsp fresh ginger, grated (optional)
- •Salt to taste
- •Toppings: soft-boiled egg, spring onion, sesame oil
Method

Combine rice and stock in a pot. Bring to a boil.

Reduce heat to low. Simmer, stirring occasionally, for 35–40 minutes until rice breaks down and porridge is thick and creamy.

Add ginger if using. Season with salt.
