Simple Rice Porridge (Congee)

A soothing, low-fibre meal ideal for when your digestive system needs a rest. Easy to digest and gentle on the stomach.

Ingredients

  • 1/2 cup white rice (jasmine or short grain)
  • 4 cups chicken stock or water
  • 1 tsp fresh ginger, grated (optional)
  • Salt to taste
  • Toppings: soft-boiled egg, spring onion, sesame oil

Method

    Combine rice and stock in a pot. Bring to a boil.

    Reduce heat to low. Simmer, stirring occasionally, for 35–40 minutes until rice breaks down and porridge is thick and creamy.

    Add ginger if using. Season with salt.

    Serve with a soft-boiled egg, sliced spring onion, and a drizzle of sesame oil.
