Kumara & Red Lentil Dhal
A warming, plant-based meal rich in fibre and protein. Easy to batch cook and freeze for days when cooking feels too much.

Ingredients
- •1 cup red lentils, rinsed
- •1 large kumara, peeled and diced
- •1 onion, diced
- •2 cloves garlic, minced
- •1 tbsp fresh ginger, grated
- •1 tbsp curry powder
- •400ml coconut milk
- •2 cups vegetable stock
- •Juice of 1 lime
- •Fresh coriander to serve
- •Rice or naan to serve
Method

Sauté onion in a large pot until soft, about 5 minutes.

Add garlic, ginger, and curry powder. Cook for 1 minute.

Add kumara, lentils, coconut milk, and stock. Stir to combine.

Bring to a boil, then reduce heat and simmer for 20–25 minutes until lentils and kumara are tender.

Stir in lime juice. Serve over rice with fresh coriander.
