Nourishing Chicken & Vegetable Soup

Ingredients

  • 2 chicken breasts, diced
  • 1 tbsp olive oil
  • 1 onion, finely diced
  • 2 carrots, peeled and diced
  • 2 stalks celery, diced
  • 2 cloves garlic, minced
  • 1L chicken stock
  • 1 cup small pasta (orzo or risoni)
  • Salt and pepper to taste
  • Fresh parsley to serve

Method

    Heat olive oil in a large pot over medium heat. Add onion, carrot, and celery. Cook for 5 minutes until softened.

    Add garlic and cook for 1 minute until fragrant.

    Add diced chicken and cook until lightly browned, about 3–4 minutes.

    Pour in chicken stock and bring to a boil.

    Add pasta, reduce heat, and simmer for 10–12 minutes until pasta and chicken are cooked through.

    Season with salt and pepper. Serve topped with fresh parsley.
